Ingredients
Pita Sandwich Ingredients
- Grilled chicken*
- Pita bread - we used Joseph's Low Carb Pita Bread
- Mixed greens
- Sliced sweet onions - we used RealSweet Onions
- Sliced mini sweet peppers
Yogurt Curry Sauce Ingredients
- 1 cup plain Greek yogurt
- 1 tbsp curry powder
- 1 limes
- Salt and pepper to taste
*Pro Tip - Make several pounds in the beginning of the week to use all week long on sandwiches, salads or as a high-protein snack
Preparation
- Add Greek yogurt to a bowl
- Zest lime and add to yogurt.
- Squeeze in the juice of the lime and add to yogurt.
- Add curry powder.
- Mix well and set aside.
- Open pita bread and spread the yogurt curry sauce on both sides of the pita bread.
- Fill pita with greens, sliced onion, sliced sweet peppers, grilled chicken, and then top with additional yogurt curry sauce.
- Enjoy with a glass of cold Florida Milk
