Ingredients
- ½ large right banana
- ½ C of cauliflower, steamed
- ½ C zucchini, steamed
- ½ C of milk
- ½ C of egg whites
- 6 slices of whole grain bread
- 2 C graham cracker crumbs
- 1 T vanilla Greek yogurt, for topping; chocolate pudding, for topping; strawberries, for topping.
Preparation
- Blend cauliflower, zucchini, and banana in a blender or mash by hand. Add milk and egg whites.
- Soak both sides of a slice of whole grain bread in the mixture, so it is damp, but not soggy. Place the bread in a container with graham cracker crumbs. Coat both sides,
- Heat a pan on the stovetop and melt butter. Cook each side of bread for about 2 minutes.
Serving Instructions: Place on a plate and cut the bread in half. Spread your favorite vanilla Greek yogurt and then top with chocolate pudding. Serve with fresh strawberries and a glass of cold milk.
