Ingredients
- 6 large eggs
- 2-2/3 C Romano and lite ricotta cheese
- 1 to 1-1/2 C spinach, cut
- ¼ C onions, chopped
- Handful chives, chopped
- 1 T olive oil
- ¼ tsp salt & pepper
Preparation
- Preheat oven to 375F.
- Mix eggs and cheese together in medium bowl. Set aside.
- Heat olive oil and sauté onions and spinach. Let cool.
- Mix veggies with egg & cheese mixture, sprinkle with chives. Spoon into muffin pans and bake at 375F for 18-22 minutes.
- Let muffins cool and serve.
