Ingredients
- 6 large eggs
- ½ C of Greek yogurt
- ¼ C of oat flour
- ¼ tsp. of baking powder
- ¼ tsp. of baking soda
- ½ C of favorite veggies (ex: spinach, tomatoes)
- ½ C of low-fat cheese, shredded
- Salt and pepper to taste
Preparation
- Preheat oven to 350 degrees. Pour first 5 ingredients into blender and pulse. Spread veggies in bottom of 8x8 greased glass dish. Pour egg mixture over top.
- Bake at 350 degrees for 15 minutes or until eggs are set. Sprinkle cheese over top; bake 5 more minutes.
Serving Instructions: Eat in slices or scoop into wraps and garnish with sour cream, cilantro or salsa.
