Ingredients

  • 6 large eggs
  • ½ C of Greek yogurt
  • ¼ C of oat flour
  • ¼ tsp. of baking powder
  • ¼ tsp. of baking soda
  • ½ C of favorite veggies (ex: spinach, tomatoes)
  • ½ C of low-fat cheese, shredded
  • Salt and pepper to taste

Preparation

  1. Preheat oven to 350 degrees. Pour first 5 ingredients into blender and pulse. Spread veggies in bottom of 8x8 greased glass dish. Pour egg mixture over top.
  2. Bake at 350 degrees for 15 minutes or until eggs are set. Sprinkle cheese over top; bake 5 more minutes.

Serving Instructions: Eat in slices or scoop into wraps and garnish with sour cream, cilantro or salsa.
