The mild herbs and onion add flavor and texture to this creamy mac and cheese.
Ingredients
- 1 pound uncooked corkscrew pasta
- 1/2 cup water
- 2 cups chicken or vegetable broth
- 3 tablespoons unsalted butter, cut into small bits
- 3 cups shredded cheese, divided
- 1 cup half-and-half or heavy cream (see note)
- 2 teaspoons freshly chopped chives
- 1/4 cup very thinly sliced green onions
- Coarse ground salt and black pepper to taste
Preparation
- In the Instant Pot bring the water, broth and butter to boil. Add the pasta. Season with salt and pepper. Cook for 8 minutes using the manual function. Release the steam and stir gently.
- Fold in 2 cups shredded cheese, half-and-half, chives, and green onions. Let rest 3 to 5 minutes to allow flavors to meld. Top with remaining cheese and season with salt and pepper.
Note: You can substitute whole milk for the half-and-half or cream. Whisk in 1 tablespoon on finely milled flour, such as Wondra brand, before adding to help thicken the whole milk. You can also cut the cheese back to 2 1/2 cups, if desired.
