Ingredients
For the scones:
- 2 cups all purpose flour
- 1/3 cup sugar
- 1/4 teaspoon salt
- 1/2 cup diced pineapple that has soaked in warm water for 10 minutes
- 1/4 shredded coconut
- 1/4 cup chopped macadamia nuts
- 1/3 cup white chocolate chips
- 1/2 teaspoon lime zest
- 1 teaspoon vanilla extract
- 1 cup heavy cream
For the glaze:
- 1/4 stick butter, melted
- 1/4 cup evaporated milk
- 1 1/2 cups confectioners’ sugar
- 1/2 teaspoon rum extract
Preparation
For the scones:
- Preheat oven to 375°F In a medium bowl, combine the flour, baking powder, and salt and lime zest.
- Add the pineapple, coconut, and white chocolate chips and stir together.
- Add in the cream and extract and stir until batter begins to form a dough.
- Place the dough on a greased baking sheet and form into a thick disk shape 8-9" wide.
- Score the disk into eight equal wedges.
- Optional: you may brush the dough with melted butter, and sprinkle with 1-2 tablespoons shredded coconut for garnish.
- Bake for 20-30 minutes or until golden.
For the glaze:
- In a small bowl, combine the butter, milk, vanilla extract, and sugar.
- Beat until smooth and creamy.
- Additional sugar may be added for thicker consistency.
- Drizzle over cooled scones.
