Ingredients

For the scones:

  • 2 cups all purpose flour
  • 1/3 cup sugar
  • 1/4 teaspoon salt
  • 1/2 cup diced pineapple that has soaked in warm water for 10 minutes
  • 1/4 shredded coconut
  • 1/4 cup chopped macadamia nuts
  • 1/3 cup white chocolate chips
  • 1/2 teaspoon lime zest
  • 1 teaspoon vanilla extract 
  • 1 cup heavy cream 

For the glaze:

  • 1/4 stick butter, melted
  • 1/4 cup evaporated milk 
  • 1 1/2 cups confectioners’ sugar
  • 1/2 teaspoon rum extract 

Preparation

For the scones:

  1. Preheat oven to 375°F In a medium bowl, combine the flour, baking powder, and salt and lime zest. 
  2. Add the pineapple, coconut, and white chocolate chips and stir together.
  3. Add in the cream and extract and stir until batter begins to form a dough. 
  4. Place the dough on a greased baking sheet and form into a thick disk shape 8-9" wide. 
  5. Score the disk into eight equal wedges.
  6. Optional: you may brush the dough with melted butter, and sprinkle with 1-2 tablespoons shredded coconut for garnish.
  7. Bake for 20-30 minutes or until golden.  

For the glaze:

  1. In a small bowl, combine the butter, milk, vanilla extract, and sugar.
  2. Beat until smooth and creamy.
  3. Additional sugar may be added for thicker consistency.
  4. Drizzle over cooled scones.
