Ingredients
- 1 cup rolled oats
- 1 scoop vanilla protein powder
- 1 tsp baking powder
- 2 tsp cinnamon
- ½ tsp ginger
- ¼ tsp nutmeg
- ½ tsp salt
- 1 medium banana
- 1 tsp vanilla extract
- ¾ cup frozen cauliflower rice (optional)
- 1 cup milk
- ¼ cup apple – grated
- ¼ cup carrot – grated
- Zest from 1 orange
- 2 tbsp raisins – divided
- 2 tbsp shredded coconut – divided
- 2 tbsp chopped walnuts or pecans – divided
Preparation
- Preheat oven to 400 degrees and spray 2 oven safe bowls generously with cooking spray.
- In a high-speed blender or food processor, add all ingredients except for apple, carrot, zest, raisins, coconut, and nuts. Blend until smooth.
- Fold in grated apple, carrots, and orange zest. Transfer evenly into bowls and top each with 1 tbsp each coconut, raisins, and nuts.
- Bake for 30-40 minutes – tenting your bowl with foil halfway through your baking time so the toppings don’t burn.
- Let cool and top as desired before serving. Enjoy!
