Ingredients

  • ½ loaf bread - cubed via hand or cut - about 6 cups
  • 2 tablespoons sugar
  • 5 eggs
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 2 cups Florida milk

Streusel topping:

  • 2 tablespoons sugar
  • 2 tablespoons brown sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon ground cinnamon
  • 2 tablespoons cold butter cubed

Preparation

  1. Preheat oven to 350.
  2. Spray muffin tin.
  3. In a large bowl combine the milk, sugar, eggs, vanilla and cinnamon.
  4. Add bread.
  5. Divide the mixture between the 12 muffin cups. There should be about 1/3 cup in each cavity.
  6. Prepare the streusel topping and sprinkle on top of the muffins.
  7. Bake for 35-40 minutes or until golden brown. Allow the muffins to cool in the pan for 5 minutes before removing.
  8. Top with powdered sugar and/or maple syrup if desired
  9. Serve with a glass of Florida Milk and enjoy!
