Ingredients
- ½ loaf bread - cubed via hand or cut - about 6 cups
- 2 tablespoons sugar
- 5 eggs
- 1 tablespoon vanilla extract
- 1 teaspoon cinnamon
- 2 cups Florida milk
Streusel topping:
- 2 tablespoons sugar
- 2 tablespoons brown sugar
- 2 tablespoons all-purpose flour
- 1/4 teaspoon ground cinnamon
- 2 tablespoons cold butter cubed
Preparation
- Preheat oven to 350.
- Spray muffin tin.
- In a large bowl combine the milk, sugar, eggs, vanilla and cinnamon.
- Add bread.
- Divide the mixture between the 12 muffin cups. There should be about 1/3 cup in each cavity.
- Prepare the streusel topping and sprinkle on top of the muffins.
- Bake for 35-40 minutes or until golden brown. Allow the muffins to cool in the pan for 5 minutes before removing.
- Top with powdered sugar and/or maple syrup if desired
- Serve with a glass of Florida Milk and enjoy!
