Ingredients
- 1/4 cup melted butter
- 1/2 cup white sugar
- 1 tsp vanilla extract
- 1 cup cottage cheese (plain whole milk)
- 1/4 cup milk
- 2 eggs
- 1 1/2 cups all purpose flour
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 tsp ground cinnamon
- 1 cup fresh blueberries
Preparation
- Preheat the oven to 375 F. Line every other muffin tin hole with liners.
- In a large bowl whisk the butter, sugar, vanilla, milk, and eggs. Whisk until ingredients are well combined and then mix in the cottage cheese.
- Add in the flour, baking soda, salt, and cinnamon. Fold the ingredients together with a rubber spatula until incorporated. Be careful not to over mix.
- Toss the blueberries in a bit of flour until they are well coated. Gently fold them into the batter.
- Spoon the batter into the muffin tin liners until roughly 3/4th is full. The muffins will rise as they bake and we don't want them to overflow. Top off with more blueberries.
- Bake for 23-25 minutes or until a toothpick inserted in the center comes out clean.
- Let cool completely before removing from the liners.
