Ingredients

  • 1/4 cup melted butter
  • 1/2 cup white sugar
  • 1 tsp vanilla extract
  • 1 cup cottage cheese (plain whole milk)
  • 1/4 cup milk
  • 2 eggs
  • 1 1/2 cups all purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground cinnamon
  • 1 cup fresh blueberries

Preparation

  1. Preheat the oven to 375 F. Line every other muffin tin hole with liners.
  2. In a large bowl whisk the butter, sugar, vanilla, milk, and eggs. Whisk until ingredients are well combined and then mix in the cottage cheese.
  3. Add in the flour, baking soda, salt, and cinnamon. Fold the ingredients together with a rubber spatula until incorporated. Be careful not to over mix.
  4. Toss the blueberries in a bit of flour until they are well coated. Gently fold them into the batter.
  5. Spoon the batter into the muffin tin liners until roughly 3/4th is full. The muffins will rise as they bake and we don't want them to overflow. Top off with more blueberries.
  6. Bake for 23-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool completely before removing from the liners.
  8. Enjoy!!
