Ingredients

  • 1/2 pound medium shrimp, peeled, cooked and deveined coarsely chopped
  • 1/4 cup finely diced red bell pepper
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 cups milk (reduced fat is fine, not skim)
  • 1/4 cup heavy cream
  • 1 tablespoons tomato paste
  • 1 teaspoon dill
  • 1/4 teaspoon garlic powder
  • 1 teaspoon sugar
  • salt/pepper to taste

Preparation

  1. In a saucepan, over medium heat, melt the butter.
  2. Add the flour, bell pepper, and onion and cook until onion is golden.
  3. Add the tomato paste and sugar and stir well.
  4. Stir in the milk, cream, and seasonings and bring to a low boil.
  5. Using an immersion blender, blend the soup until smooth. (Optional: you can also allow to cool slightly and place in a blender until smooth)
  6. Add the shrimp, reserving one whole for garnish if desired.
  7. Add salt and pepper to taste.
