Ingredients
- 1/2 pound medium shrimp, peeled, cooked and deveined coarsely chopped
- 1/4 cup finely diced red bell pepper
- 3 tablespoons butter
- 3 tablespoons flour
- 2 cups milk (reduced fat is fine, not skim)
- 1/4 cup heavy cream
- 1 tablespoons tomato paste
- 1 teaspoon dill
- 1/4 teaspoon garlic powder
- 1 teaspoon sugar
- salt/pepper to taste
Preparation
- In a saucepan, over medium heat, melt the butter.
- Add the flour, bell pepper, and onion and cook until onion is golden.
- Add the tomato paste and sugar and stir well.
- Stir in the milk, cream, and seasonings and bring to a low boil.
- Using an immersion blender, blend the soup until smooth. (Optional: you can also allow to cool slightly and place in a blender until smooth)
- Add the shrimp, reserving one whole for garnish if desired.
- Add salt and pepper to taste.
